Article talks about what tequila is, what it is made from, what it is like and how it should be drunk.
To begin with, I would like to debunk a number of myths that exist around the wonderful Mexican drink called «Tequila» («Tequila»). And there is enough of this goodness around the exotic guest, which is not surprising: a drink from the edges of a sombrero and guitars, little known until recently to a wide circle of our fellow countrymen, was simply bound to give rise to a whole mythology.
So, what are the opinions on tequila?
— Tequila — This is cactus moonshine. The swill is strong and smelly.
— Tequila — This is cactus vodka. Vodka is like vodka, there is no wheat, from and driven from the thorns. Ours is better!
— Tequila — This is the next step in the distillation of mezcal. With rough distillation, mezcal is obtained, and with its further distillation and purification — tequila. Therefore, mezcal is rich in taste and smell, and tequila — emasculated and refined.
— Tequila is distilled from a Mexican vegetable — blue agave.
— Mezcal, and in addition tequila (xfromya and to a lesser extent), contains mescaline — hallucinogenic drug.
But what really?
In fact, tequila — from a personal strong drink (usually contains 40% or 38% alcohol; sometimes — 35% alc.), with a delicate taste and aroma, the drinking of which is ritualized and aestheticized. A hangover in the morning — unless, of course, you drink liters of tequila and have a snack — It just doesn't happen.
Tequila — not moonshine. The original wort is distilled with high quality (sometimes twice or even three times) and thoroughly purified. This bad cheap tequila is similar to moonshine, but the good one is not inferior in purity to elite luxury vodka. In terms of taste, in our opinion, tequila is significantly superior to the vast majority of vodka varieties.
Tequila is actually made from blue agave (Agave azul tequilana weber). Only this is not a vegetable or even a cactus, but one of more than 200 species of the desert plant family, a relative of aloe. The plant really looks like a very large aloe (up to two meters in the span of its fleshy leaves). To produce tequila, they take blue agave grown in strictly defined regions of Mexico, namely — in certain areas of the Mexican states of Jalisco, Guanajuato, Michoacan, Tamaulipas and Nayarit — just like real cognac is made from certain grape varieties growing in the French province of Cognac. This is due to the characteristics of the local climate and soil. The word itself «tequila» (tequila) comes from the name of the town of Tequila, located near Guadalajara — capital of the state of Jalisco. A number of particularly elite varieties of tequila are produced in the highlands of this state.
When the blue agave blooms «arrow» with a flower at the end «shoots» in two or three days at a height of up to 4-5 meters. Before the agave ripens, excess leaves are cut off so that they do not take over the life-giving juices of the plant. On plantations, a special person watches when the plant’s “arrow” hatches, recording the very beginning of flowering — and immediately cuts off the “arrow”, sealing the cut with a composition based on natural rubber. As a result, all the juices that you should have used for flowering begin to bubble, finding no way out, and form the so-called “pineapple.” — a huge, very juicy growth (swelling), in shape really reminiscent of a melon or pineapple, weighing up to 5 kg or more. From these «agave pineapples» and go into fermentation and processing to produce tequila.
To sum it up, in tequila — the juice of life and flowering itself!
Tequila is not a product of further distillation and purification of mezcal. Tequila is made from blue agave, and mezcal — mainly from its “closest relatives”: giant agave, espadena, wild sylvester, tubala, dazorrion and agave Kravinsky. In short, this is a completely separate drink, xfromb and «related» tequila.
Of course, neither mezcal nor tequila contains any hallucinogens.
By the way, in Mexico, tequila is officially declared a national treasure, and the quality of a number of tequila varieties (for example, the entire line of varieties of the company Tequilas del Señor — and not only) is controlled by the government of Mexico. There is a special «Tequila Regulating Tip» — El Consejo Regulador del Tequila, A.C. (CRT), consisting of the producers themselves, which monitors the implementation of the Official Mexican Standard for this drink. Tequila, as a drink, is certified by Denominación de Origen — i.e., certified as an original (unique) drink at the place of origin (production).
There are tequila «mixto» — in which, in addition to blue agave alcohols (at least 51%), there are also grain alcohols (up to 49%) — and tequila, prepared exclusively (100%) from blue agave alcohols.
Tequila varieties (regardless of the manufacturer's brand) are classified as follows:
White or Silver (Blanco, Plata, Silver). Colorless and transparent in appearance (like vodka). This tequila is not aged in barrels after distillation. Some believe that it has the most «pure» blue agave flavor.
Young or «Joven» (Joven). Aged in oak barrels for up to 2 months. This «minimal» Exposure is usually not indicated on labels. In some cases, «young» Tequila has the right to have a slightly golden color, and then it is called:
«Oro» (Oro) or «Gold» (Gold) —«Angry». «Angry» Tequila has the right to be produced in different ways, namely:
— By mixing (blending) «silver» (blanco) or «young» (Joven) tequila with aged (reposado) tequila of the same brand.
— Through the process «abocado» (abocado) — i.e., tinting «silver» (blanco) or «young» (Joven) tequila with caramel (cane) sugar and / or infusion (extract) of oak chips, of which tequila should contain no more than 1 weight percent.
— By combining blending with the «abocado» process.
In the absence of blending or «abocado» «young» (Joven) tequila looks practically indistinguishable from «silver» tequila (just as colorless and transparent), and is not labeled as «gold». That is, not every «evil» tequila — purely «young», and not every «young» tequila — “It’s evil”, which opens up considerable scope for the production of a whole range of different varieties. But with more mature varieties of tequila, everything is regulated much more strictly and clearly:
Aged or «Reposado» (Reposado). Capable of going through (or not going through) the process of «abocado» (tinting), but one way or another it must be aged in oak barrels from 2 to 11 months.
Long Exposure or «Anejo» (Anejo). Aged for at least 1 year in oak barrels with a volume of at least 600 liters.
Very Long Exposure or «Extra Anejo» (Extra Anejo). INaged for at least 3 years in oak barrels with a volume of at least 600 liters.
A short note from the history of tequila: in 1616, in the documents of the Archbishopric of Guadalajara, mezcal wine, produced in the province of Avalos (now the city of Guzman), was first mentioned in writing. Provincia de Bvalos (hoy Cd. Guzmbn). It was not a strong alcoholic drink (as it is now), and it was consumed mainly by clergy for the administration of cults. Tequila itself was born after the introduction of distillation by the Spanish colonialists. This process improved purification and taste, and also significantly increased the strength of the drink.
There is a legend about the origin of tequila: a group of local Indians once took refuge in a cave from a thunderstorm. Strong lightning around; one hit the agave plant and «cooked» his. When the Indians came out after the thunderstorm, they noticed the unusual sweetish smell of baked agave. Having tasted the baked agave, they found it sweet and decided that it was a healthy plant. Later, one of them forgot the baked agave juice in the vessel for several days, and when he remembered, he noticed that the juice foamed and had a different taste. He tried it and his consciousness changed. So mezcal wine was hidden, and it was decided that it was a gift from the deity Mayahuel, the goddess of fertility (fertility). Mayahuel fed with her breasts with 400 nipples the 400 Gods of Intoxication — rabbits Senzon Tfromochtin (or countless of them).
So, both according to legend and according to the records of the Archbishopric of Guadalajara that have come down to us, initially in Mexico a not particularly strong drink like mash or homemade wine was produced from the juice of baked (fermented) agave. A similar drink is still produced in Mexico. It's called «pulque» (pulque) or «octyl» (octil) and usually contains from 4 to 8 percent alcohol (in principle, the strength of pulque can reach up to 18% alc.). And only later, with the introduction of distillation, this drink turned into the tequila we know today.
Now let's move on to brands and varieties of tequila. Let’s make a reservation right away: we only talk about those brands and varieties that we have personally tried, and which we can judge from our own experience, and not from hearsay.
Perhaps our most popular brand Sauza. The tequila is decent, but not the most refined — There are also more elite brands. However, finding them here is often not easy — Yes, and they cost noticeably more. For the first acquaintance with tequila as a drink, Sauza frompersonally is suitable. And some of its varieties will appeal to connoisseurs.
Sauza Blanco, aka «silver» — It has a soft and unobtrusive taste, a light tart aftertaste and a classic aroma of blue agave. Transparent and colorless, like good vodka, contains 51% blue agave spirit (the rest is grain alcohol), 40% alc. Goes through double distillation. Recommended for those who do not like a too rich taste, and for whom tannins that enter the product during aging in oak barrels are contraindicated. However, even in aged tequila there are much fewer of them than in cognac or whiskey.
Sauza Gold (preferably — Sauza Extra Gold), aka «angryfrom». Contains 51% blue agave spirit, 40% alc. This is the same «silver» tequila, only aged for up to six months in white oak barrels. In addition, caramel sugar and oak bark extract are used in the preparation process of this tequila. It has a bright golden color. The taste of «evilfromoy» tequila is noticeably more rich and concentrated than the “silver” one, with light caramel tones and hints of oak against the background of the dominant taste of blue agave. Gives a long warming aftertaste. The aroma is also more pronounced and contains light notes of sugar cane, caramel and tropical fruits.
Sauza Conmemorativo Anejo — tequila class «luxury», and one of the best aged tequilas class «Anejo» (in fact, this is actually an «Extra Anejo» tequila). Contains 51% blue agave spirit, 40% alc. Aged for up to four years in small cognac barrels made of light oak. It has a dark golden color. Pleasant, fresh-spicy aroma with hints of citrus fruits. Soft, delicate and rich taste with light tones of chocolate, fruit and vanilla against the background of the freshness of blue agave; warm long aftertaste with caramel-citrus tones. Tequila for true connoisseurs — sophisticated «tequileros».
Sauza Hornitos Reposado — aged tequila for true connoisseurs. 100% blue agave spirit, 38% alc. Aged for one year in new light oak barrels, it has the color of old gold. The taste as a whole is close to the taste of Sauza Conmemorativo Anejo, but richer and more pronounced, closer to the natural fresh taste of blue agave; however, against the background of the «core» The taste of blue agave can be distinguished from and from shades of vanor, peaches and apples. Gives a long aftertaste, first scorching-«pepper», first — morbidly warm, with a whole range of subtle shades. For lovers of strong, rich and multifaceted tastes, aromas and sensations.
Sauza Tres Generaciones Plata («Silver») — «silver» triple distilled and highly refined tequila. 100% blue agave spirit, 40% alc. It is not aged in barrels. Transparent, like a tear, with a soft romantic scent, delicate, refined taste and a pleasant, unobtrusive aftertaste. Recommended for connoisseurs of fine tastes.
Sauza Tres Generaciones Anejo — Premium tequila, triple distilled, aged for at least 12 months in lightly charred American oak barrels. 100% blue agave spirit, 40% alc. Light amber color. Light, spicy-«fruity» aroma. Subtle, slightly spicy taste, where around the central tone of blue agave a whole bouquet of light, exotic from-undertones is revealed. Long, soft, warm and slightly «smoky» aftertaste. Tequila for real connoisseurs - «tequileros».
Jose Cuervo. This is perhaps the most popular tequila brand in the world — even more popular than Sauza. At the same time, we, as usual, have our own, special pride. — As a result, here in Ukraine and Russia, in contrast to the rest of the world, Sauza is better known than Jose Cuervo.
The brand is named after Don José Antonio Cuervo, to whom the Spanish king in 1758 granted a plot of land in Mexico, near the city of Tequila, for the cultivation of blue agave. and his son, José Maria Guadalupe Cuervo, who in 1795 received a patent for the production of mezcal wine.
So, Jose Cuervo and its varieties, which we personally managed to try:
Jose Cuervo Clasico Premium (Joven) («young») — 51% blue agave spirit, 38% alc. Silvery-transparent, aged in barrels for up to 2 months. Tequila with an original, pronounced aroma and taste. Recommended for lovers of strong sensations and bright tastes. Many tasters call the taste of Jose Cuervo “soft”, “delicate” or even «refined» — but here we allow ourselves to disagree with them. The taste of all varieties of Jose Cuervo — extremely bright, expressive, sometimes even a little rough — and completely unique. And the longer the tequila is aged in barrels — the more powerful the taste is. In general, Jose Cuervo — one of the most original tequila brands; Below we will talk about it in a little more detail using the example of other varieties of this brand.
Jose Cuervo Especial Plata (Silver) (Made with blue agave) («silver») — 51% blue agave spirit, 38% alc. Made by adding fresh (not fermented) blue agave juice instead of part of the water. It has a milder taste than Jose Cuervo Clasico. This softening is clearly due to the addition of fresh blue agave juice.
Jose Cuervo Especial Oro («Gold») (aka «angry») — 51% blue agave spirit, available in 38% and 40% alc. This is a blend of Jose Cuervo Clasico and Jose Cuervo Especial Reposado, aged for three months in old oak barrels. Along with Jose Cuervo Especial Reposado (see below), it has the strongest and most pronounced taste of all the tequilas we have ever tried — spicy and extremely rich. It really does slightly resemble good, aromatic moonshine (in the best sense of the word!). A similar effect is deliberately achieved by using a special type of yeast during fermentation. In general, all Jose Cuervo brands (and this one — in nuances!) — for lovers of pronounced and memorable tastes. Even an inexperienced person will never confuse Jose Cuervo with any other tequila! Of all the varieties, tequila tastes closest to mezcal.
Jose Cuervo Especial Reposado — 51% blue agave spirit, double distilled, 38% alc.; Aged for three months in old American white oak barrels. In addition, it has a very pronounced taste and aroma. Jose Cuervo Especial Reposado has an even more intense taste and aroma than the previous variety, but at the same time the drink is considerably “ennobled.” In fromdifference from «evilfrom» Jose Cuervo, has less resemblance to moonshine; In appearance, this tequila seems thick, slightly oily, and has a bright golden color. Powerful, memorable taste with tones of blue agave, oak and smoke, long spicy aftertaste; the taste and especially the aftertaste evoke distant associations with cognac.
Jose Cuervo Traditional Reposado — 100% blue agave spirit, 38% alc. A blend of blue agave spirits aged in oak barrels from 2 months to a year. Tequila class «Premium» and «classic» tequila, which has received many international awards. This is the very first variety of tequila that the Cuervo family began to produce. Produced since 1795, it is still the most popular Reposado tequila in Mexico. Light straw color. Spicy-herbaceous aroma with some exotic fruits. The taste is noticeably more delicate than other Jose Cuervo varieties. Against the background of fresh tones of blue agave — From hints of tropical fruit, oak and black pepper, with subtle hints of vanor. The characteristic flavor of Jose Cuervo, which is achieved by using special yeast during fermentation, is much less pronounced in this variety than in other Jose Cuervo varieties, and is revealed more in the aftertaste. The aftertaste is long, a little «pepper» and warming. Expensive elite tequila for connoisseurs of «classics» — and at the same time quite complex and delicate tastes, aromas and aftertastes.
Jose Cuervo Especial Black Medallion (Anejo) — 51% blue agave spirit, 38% alc. A special blend of blue agave spirits, distilled using Jose Cuervo proprietary technology, and aged in new charred oak barrels for more than 1 year. Dark, rich color, similar to the color of aged cognac. Rich aroma with fresh vanilla and exotic fruits. The taste is also rich and rich, with hints of the same vanilla, chocolate and tropical fruits. Long and rich, slightly «smoky» aftertaste, in which more clearly than Jose Cuervo Especial Reposado, “cognac” flavors can be traced. tones — like some other varieties of Anejo class tequila. Actually, this tequila is related to «cognac» class.
Olmeca Blanco («silver») — ordinary well-refined tequila, which is not aged in barrels. Contains 51% blue agave spirit, 38% alc. The taste is close to Sauza Blanco, the tones of blue agave dominate — but at the same time, in our opinion, the taste is more «blurred» and less expressive than that of «Sauza», the aftertaste is shorter.
Olmeca Gold («angry») — blend (blend) from «silver» «Olmec» and «Olmec», aged from six months to a year in oak barrels. Contains 51% blue agave spirit, 38% alc. Olmeca Gold has a richer and more concentrated taste, and the aroma is also more pronounced than Olmeca Blanco. Light «smoky-fruity» the aftertaste is slightly dissonant with the original taste of blue agave and muffles it a little. However, the «Olmeca» there are many of her followers who value her higher than the same “Sauza”, which only once again confirms the long-known truth: “There is no comrade according to taste.”
1921 Reposado — considered one of the world's best tequila brands — and one of the best tequilas we've ever tasted. Competition «1921» In the Reposado class, few of the varieties known to us can form; for example, tequila brand «Patron», which will be discussed below. Contains 100% blue agave spirit, 40% alc. It is aged for 4 months in 200-liter bourbon barrels, due to which it acquires a unique amber-ash color. Soft, rich and at the same time very delicate taste with many nuances and a long aftertaste, wonderful aroma. Monumental square bottle «antique» with a metal bas-relief label «1921» imprinted directly into the glass. Production technology has remained virtually unchanged since the 18th century. If you want to get the “maximum” impression of tequila, and there is a chance to get it from a rare variety — We highly recommend!
Patron Silver (Joven) («silver» or «young») — wonderful soft drink with a thin «transparent» taste and light, unobtrusive aroma. Contains 100% blue agave spirit, 40% alc., is aged in barrels for less than 2 months, and therefore retains the most adequate taste of blue agave. Goes through double distillation. Well-refined, high-quality elite tequila. Available in decanter-like rectangular bottles with cork stoppers. Bottling — manual, on each bottle — your individual number. Unfortunately, in the post-Soviet space it is sold at an inappropriately high price.
Patron Reposado — Double-distilled Patron Silver tequila aged for at least six months in small old oak barrels. Contains 100% blue agave spirit, 40% alc., premium tequila. It has a light ash color, a subtle, slightly spicy aroma and a fresh taste. Despite the fact that the taste of Patron Reposado is more intense than that of Patron Silver, this does not prevent one from enjoying its subtle shades with hints of vanor and exotic fruits against the background of a central tone of blue agave — and a long, slowly fading warm aftertaste. How and if Patron Silver — branded bottle-«decant» with cork stopper, manual bottling, individual number on each bottle… and, alas, an inappropriately high price.
Herencia de Plata Silver («silver»). Contains 100% blue agave spirit, 38% alc., is not aged in barrels, and therefore retains the most adequate taste of blue agave. Transparent, like a tear; Available in squat branded bottles with a wooden cap on the cork. For this tequila, we use blue agave from 8 to 13 years old. Goes through double distillation. It has a light pleasant aroma, a subtle, fresh and clean taste of blue agave with barely noticeable fruity and citrus notes, an unobtrusive, slowly fading aftertaste. For connoisseurs of subtle tastes and undertones.
Herencia de Plata Reposado. Contains 100% blue agave spirit, 38% alc. Goes through double distillation. Premium tequila, aged for at least six months in American white oak barrels. The drink is light ash-colored in squat branded bottles with a wooden cap on the cork. It has a fresh aroma, in which the tones of exotic fruits, caramel and blue agave itself are intertwined. Spicy, medium intensity, slightly «cognac» taste with tones of vanilla, caramel, citrus, peaches and other fruits, among which are hidden fruits of blue agave. The aftertaste is long and warm, with peppery, vanilla and fruity overtones. A drink for lovers of a rich palette of flavors.
Herencia de Plata Anejo. Contains 100% blue agave spirit, 38% alc. A golden-cognac-colored drink in squat branded bottles with a wooden cap on the cork. Rich spicy aroma. An equally rich, slightly viscous taste with distinct vanilla-cognac tones, hints of chocolate, walnuts and nutmeg, sweet pepper and spices. Long spicy aftertaste. Tequila «cognac» class. For connoisseurs of rich and complex tastes.
All varieties of Herencia tequila are produced by Tequilas del Señor.
Reserva del Senor Blanco. Contains 100% blue agave spirit, 38% alc. It is not aged in barrels. It has an unobtrusive fresh aroma of blue agave. The taste is rich, deep — but at the same time very delicate. The tones of blue agave confidently dominate against the background of a whole bouquet of subtle shades of tropical fruits. The aftertaste is warm, long and deep. How and the other Reserva del Senor varieties mentioned below are available in tall faceted decanter-like bottles with cork stoppers with a glass cap.
Reserva del Senor Reposado. Contains 100% blue agave spirit, 38% alc. Color — light-ashy. Aged in oak barrels for 11 months. The aroma, against the background of the freshness of blue agave, clearly contains tones of citrus and tropical fruits. In addition to blue agave, the taste also harmoniously combines the tones of vanilla, tropical fruits and citrus. The aftertaste is long and subtle.
Reserva del Senor Anejo. Contains 100% blue agave spirit, 38% alc. Color — dark-ashy. The aroma is rich, spicy, with hints of chocolate and vanilla. The same chocolate-vanilla tones are present in the flavor spectrum, combined with smoky tones of oak and tropical fruits and giving the taste of Reserva del Senor Anejo a noble-cognac shade that is not very characteristic of tequila. Actually, this is tequila «cognac» class. The taste of blue agave in this type of tequila no longer dominates, being present “in the background.” The aftertaste is long and rich, sweet and spicy.
All varieties of Reserva del Senor brand tequila are produced by Tequilas del Señor. According to data that has not been fully verified, but nevertheless deserves some confidence, Reserva del Senor tequila — drink consumed by the government of Mexico. And from what is known absolutely precisely — So this is the fact that in September 2012, the Minister of Agriculture of Mexico, meeting with the President of Peru, presented to him with a bottle of “silver” bottle. Corralejo Blanco. Contains 100% blue agave spirit, 40% alc. It is not aged in barrels. Available in tall transparent white glass bottles. The aroma of blue agave against the background of the freshness of a grass meadow. The taste is slightly spicy, fresh, with tones of blue agave against a background of light lemon juice and tropical fruits. The aftertaste is long, warming, slightly oily.
Corralejo Reposado. Contains 100% blue agave spirit, 40% alc. Available in tall blue glass bottles. This tequila is aged in oak barrels for 4 months. Three types of barrels are used for aging — used barrels — made of French and American oak — and barrels made from local white oak — Encino. Result — The unique smell and taste of this tequila, rich in the aromas of three types of wood. The aroma contains vanilla and tropical fruits on a background of blue agave. The taste is pronounced, even a little harsh, but at the same time very rich, with clearly defined tones of oak, blue agave, various fruits and spices. The aftertaste is long and warm.
Corralejo Anejo. Contains 100% blue agave spirit, 40% alc. Available in tall red glass bottles. Aged in French oak barrels (according to other sources in new charred American white oak barrels) for one year to achieve the smoothest taste. The aroma is spicy-fresh, with voices of walnut and tones of exotic herbs. The taste is spicy, rich, slightly peppery, with tones of cinnamon and vanilla, behind which the taste of blue agave itself is not immediately discernible. The aftertaste is hot, slowly fading, with subtle tones of peppermint. Recommended for lovers of rich and complex flavors.
Corralejo Triple Destilado Reposado. Contains 100% blue agave spirit, 38% alc. Goes through triple distillation. Available in beautiful flat high-neck bottles-«flasks» blue glass. The aroma is light, spicy, with unobtrusive tones of meadow herbs. The taste is spicy, slightly oily, with tones of walnut and tropical fruits against the background of the slightly masked taste of blue agave. The aftertaste is long, soft and warm, with barely noticeable tones of vanor.
Los Arango Reposado (Corralejo). Contains 100% blue agave spirit, 38% alc. It is produced in squat square blue glass bottles, with a genuine leather label, with a metal image of a blue agave attached to the top. Very thin and «multifaceted» taste and aroma, long warm aftertaste. The freshness of blue agave against the background of light «citrus» and other «fruit» tones Tequila for true connoisseurs who prefer a subtle delicate taste with many “from shades”.
Leyenda Del Milagro Silver («silver»). Contains 100% blue agave spirit, 40% alc., triple distilled. It is not aged in barrels. Available in tall blue glass bottles. It has a subtle delicate taste with a hint of pleasant freshness and the illusion of a barely noticeable oiliness, a fresh aroma, a very light and long aftertaste. For connoisseurs of subtle, unobtrusive tastes and aromas.
Leyenda Del Milagro Reposado. Contains 100% blue agave spirit, 40% alc. undergoes triple distillation and ages for six months in small oak barrels. Available in tall reddish glass bottles. Aroma of blue agave with «fruity» tones and subtle hints of oak and caramel. The palate is soft, fruity and caramel, with hints of sugar cane and hints of blue agave in the background. The aftertaste is soft, slowly fading, with hints of tropical fruits and almonds.
Pepe Lopez Premium Silver. Contains 51% blue agave spirit, 40% alc. It is not aged in barrels. Fresh, slightly spicy aroma with light hints of citrus. A bright, unclouded taste of blue agave with a distinct taste of fresh green lime and light hints of other citrus fruits (so it is not necessary to eat this type of tequila with lime, as it should be according to the “ritual”; the taste of lime is already present in the tequila itself). The aftertaste is warm, soft and “cozy”, calming. One of the best options for your first acquaintance with tequila in general — but it will certainly appeal to avid tequileros.
Pepe Lopez Premium Gold. Contains 51% blue agave spirit, 40% alc. A blend of Pepe Lopez Premium Silver and Reposado tequila of the same brand, aged for up to a year in oak barrels; has a golden color. Powerful rich taste, long aftertaste, soft and warm; against the backdrop of the fresh taste of blue agave — Vanor and oak tones. The taste is vaguely reminiscent of Jose Cuervo Especial — but softer and with a wider range of flavors. For lovers of rich, but not too strong tastes.
Sombrero Negro Silver («silver»). Contains 51% blue agave spirit, 38% alc. It is not aged in barrels. It has a very bright, slightly «roughish» the taste has a rather narrow spectrum and a strong, burning, but not too long aftertaste. The taste is dominated by sharp, as if “cut off at the edges”, tones of blue agave, against the background of which it is quite difficult to distinguish any shades. Relatively inexpensive tequila for lovers of bright and simple tastes.
Sombrero Negro Gold («angry»). Contains 51% blue agave spirit, 38% alc. A blend of Sombrero Negro Silver and tequila of the same brand, aged for 4 months in oak barrels (Reposado); has a golden color. The taste is more intense compared to Sombrero Negro Silver. The blue agave flavor still dominates, but the oak tones with a slight «caramel» shade gives this taste a slightly greater depth and softness compared to «silver» Sombrero Negro.
Sombrero Silver («silver»). Contains 100% blue agave alcohol, 38% alc. It is not aged in barrels. Color — silver-transparent. The aroma is light, not too bright, with light hints of green walnut and meadow herbs. The taste is very soft, delicate, with light nutty tones and hints of black pepper against the background of a not too pronounced core tone of blue agave. The aftertaste is short, light, with hints of black pepper. The taste of this tequila is somewhat reminiscent of Reserva del Senor Silver tequila, which is not surprising — both of these tequilas (as well as Sombrero Negro) are produced by the same company.
Sombrero Reposado. Contains 100% blue agave alcohol, 38% alc. Aged in oak barrels for at least 6 months. It has a light golden color. The aroma is rich, fresh, with hints of tropical fruits and subtle hints of green lime. The taste is slightly oily, subtle and multifaceted; against the backdrop of the core taste of blue agave, a whole bouquet of hints is revealed, with hints of walnut, oak, smoke, black and sweet pepper. The aftertaste is long, warm, pacifying, with a slight «alcohol» bitterness. The taste of this tequila is somewhat reminiscent of Reserva del Senor Reposado tequila, which is not surprising — Both of these tequilas are produced by the same company.
Sierra Silver («silver»). Contains 51% blue agave spirit, 38% alc. It is not aged in barrels. The aroma is fresh, light, slightly herbaceous. The taste is pronounced and fresh. Light lemon-lime tones against a background of «core» blue agave flavor. The aftertaste is short, similar to a slight flash of heat, slightly oily, with barely noticeable lemon-herbal tones.
Sierra Reposado. Contains 100% blue agave spirit, 38% alc., double distilled. Aged for 2 months in old oak barrels, has a bright ash color. It has a light aroma of blue agave, fresh herbs and fruit. The taste is slightly oily, soft, slightly reminiscent of fresh green cucumber; The flavors of peaches, apples and pineapple appear against the background tones of blue agave. The aftertaste is soft, slowly fading, slightly tart, with tones of fresh greenery and barely noticeable hints of prunes. Recommended for lovers of fresh, not too strong flavors, rich in nuances.
Sierra Antiguo Anejo. Contains 100% blue agave spirit, 40% alc. Made from a selection of eight-year-old blue agave grown in the central part of the province of Jalisco at an altitude of more than 1700 m above sea level. It is aged for quite a long time in oak barrels. It has a golden-chocolate, almost «cognac» color. Thick aroma with chocolate and cognac tones, against the background of which the blue agave notes are not immediately distinguishable. Taste — chocolate-vanilla, rich, spicy, with a slight bitterness and barely noticeable coffee hints. Actually, the taste of blue agave does not appear immediately, but in the aftertaste — long, soft and warm. In general — a whole bouquet of shades of taste and aroma. Tequila «cognac» class. No wonder the manufacturing company recommends drinking this tequila from cognac glasses.
4 Pistolas Gold (tequila «4 golden guns»). 51% blue agave alcohol, 38% alc. This tequila (like «4 Pistolas Blanco») is stored in steel barrels until bottling. With age, it does not change its taste, and therefore has an unlimited shelf life. Due to its golden color, many people mistakenly believe that this is aged tequila. In fact, 4 Pistolas Gold is not aged in barrels. And its light golden color — the result of coloring with caramel sugar (no more than one percent of caramel is allowed) or an infusion of oak shavings. It has a pronounced aroma of blue agave with subtle spicy-fruity notes. The taste is soft and clean, around the «core» tones of blue agave, light caramel-vanilla and fruity shades are distinguishable. The aftertaste is long, soft and warm. It's funny that on the bottle of tequila «4 Pistolas» Only three pistols are depicted. Or the fourth «trunk» the neck of the bottle itself is considered, or it is assumed that this tequila must be drunk until you see the fourth gun. At the same time, we would not recommend conducting such experiments.
Tres Sombreros Silver («silver»). Contains 81% blue agave spirit and 19% grain spirits, 38% alc. Made from blue agave grown in the province of Jalisco. It is not aged in oak barrels. Color — silver-transparent. Aroma — fresh herbal. Taste — light, slightly oily, with herbal tones and fiery hints of black pepper. The tones of blue agave are somewhat blurred. Aftertaste — buttery and warming.
Tres Sombreros Gold («angry»). Contains 81% blue agave spirit and 19% grain spirits, 38% alc. Made from blue agave grown in the province of Jalisco. Aged in oak barrels for 2 months and lightly tinted with caramel sugar and infusion of oak shavings. Color — light-ashy. Aroma — spicy, with lots of spices and exotic fruits. The taste of Tres Sombreros Gold is very different from the taste of Tres Sombreros Silver. Light tones of vanor and peach against the backdrop of blue agave. In addition, hints of black pepper are felt. The aftertaste is short, warm and spicy. Tres Sombreros — fromrelatively inexpensive tequila, but of fairly high quality and with a pleasant taste (especially the “evil” one). In this situation we have a fairly good price/quality ratio.
Messicano Alteno Silver («silver»). Contains 100% blue agave spirit, 40% alc. Not aged in oak barrels, color — transparent, light silver. A very original brand of tequila, which began to be produced quite recently. For example, in the USA the trademark «Messicano Alteno» registered on October 21, 2009. Accordingly, this tequila began to arrive to us (in Ukraine and Russia) recently — but it has already become quite widespread. Fresh, «meadow» aroma. Light, slightly oily and slightly spicy taste with hints of black pepper and «herbaceous» from shades. Long warm aftertaste.
Messicano Alteno Gold («angry»). Contains 100% blue agave spirit, 40% alc. Short aging in oak barrels, light ash color. Delicate, slightly spicy aroma. Taste — very thin and soft, at first you hardly feel it — and only a long, light aftertaste gives the opportunity to properly taste this type of tequila. Drinks very easily and softly, the strength is almost not felt — so be careful not to «overdo».
Campo Azul Especial oro («angry»). Contains 100% blue agave spirit, 38% alc. Short aging in oak barrels, the color of ripe wheat. Against the background of the aroma of fresh blue agave juice — spicy from hints of exotic fruits with a slight “smoke”. Pronounced taste of blue agave with light tones of oak, hints of black pepper and a subtle hint of green lime. The aftertaste is soft, warm, with vanilla tones and a “secondary warming effect.” In the case of this tequila, we have an excellent price / quality ratio: with the content of 100% blue agave alcohols and a rich, bright and memorable taste, this tequila is very inexpensive. We offer it in every possible way.
Montezuma Aztec Gold («angry»). Contains 100% blue agave spirit, 40% alc. When producing this tequila, blue agave alcohol is initially distilled at 80% alcohol strength, and then, during bottling, it is diluted to 40% alcohol strength. Montezuma Aztec Gold is not aged in barrels, and its bright ash color is achieved by adding caramel sugar (up to 1%). Against the background of the aroma of blue agave — light tones of vanor and tropical fruits. The taste is oily, rich, bright. Against the background of the core tone of blue agave, shades of black pepper and vanilla are clearly felt. The aftertaste is soft, vanilla-pepper, slowly fading.
Azteca Silver («silver»). Contains 100% blue agave spirit, 38% alc. It is not aged in barrels and has a transparent silver color. Light and fresh aroma with hints of meadow herbs against the background of the core tone of blue agave. Very soft and unobtrusive taste with barely noticeable nutty and herbal notes against the background, again, of the core taste of blue agave. The aftertaste is long, gently warming and slowly fading.
Azteca Gold («angry»). Contains 100% blue agave spirit, 38% alc. It is not aged in barrels, but acquires the color of old gold by adding a small amount of caramel sugar and an infusion of oak shavings (up to 1%). Light aroma of freshness with vanilla and tropical fruits. The taste is soft, but slightly burning, with light hints of vanor and oak against the backdrop of the core taste of blue agave. The aftertaste is long, hot, tart, with a slight bitterness.
Agavita Gold («angry»). Contains 51% blue agave alcohols (rest — grain alcohols), 38% alc. Aging in oak barrels for at least two months and adding a small amount of caramel syrup and cane sugar (up to 1%) gives this tequila a rich, bright ash color. Spicy aroma with vanilla flavors. Rich and fresh buttery taste with hints of walnut and a slight bitterness, which slightly conceals the core tone of blue agave. A little «caramel» taste finale. The aftertaste is light and short-lived, warming, with light hints of hot pepper. Pleasant to the taste, but quite «simple» tequila, at an appropriate (very low) price.
Agavita Anejo. Ultra-premium tequila. Contains 100% blue agave spirit, 40% alc. Alcohols from boric blue agave with a strength of 80% alc. aged from two to four years in small oak barrels, and then diluted with specially prepared distilled water to a strength of 40% alc. This tequila has a chocolate-cognac color. Vanilla-chocolate, sweetish aroma with «cognac» nfromkami. Similar chocolate-vanilla, «cognac» taste, in which almost no tones of blue agave are felt. The aftertaste is long, spicy, soft and slightly tart. This tequila has a surprisingly well-balanced color, aroma, taste and aftertaste, harmoniously complementing each other and evoking associations more with good cognac than with tequila. Actually, this is tequila «cognac» class, and it is recommended to drink it, savoring it, like cognac, from cognac glasses — this way her taste is revealed more fully, and especially — aroma. It’s better not to snack on this tequila with lime — like other varieties of tequila «cognac» class.
Casco Viejo Reposado. Contains 100% blue agave spirit, 40% alc., has an amber-ash color. Aged in oak barrels for up to one year. The aroma is very subtle, oily-spicy, with hints of walnut and smoke. The taste is difficult to describe, with a slight bitterness, hints of black pepper and smoke. The taste of blue agave itself is hidden and is not felt immediately, at the end. A very original variety of tequila, suitable for a good feast rather than for tasting. The aftertaste is long and warm, with a “secondary warming effect.”
Quiote Reposado. Contains 100% blue agave spirit, 40% alc., has a light ash color with an amber shimmer. Blue agave alcohols 80% alc. aged for more than six months in oak barrels, and then diluted to a strength of 40% alc. It has an aroma of freshness, meadow herbs and exotic fruits, with light tones of blue agave. The taste is complex and delicate, with light tones of cinnamon, walnut and oak and hints of black pepper against the background of a somewhat hidden core tone of blue agave. The aftertaste is long, warm and soft, slowly fading, with a slight bitterness. This tequila is exported from Mexico in limited quantities, and is mainly consumed within the country, by the Mexican “tequileros” themselves.
El Toril Silver («silver»). Contains 100% blue agave spirit, 40% alc., has a transparent silver color. It is not aged in barrels. Has a light aroma of meadow herbs. The taste is “herbaceous”, very fresh and soft, slightly sweet and at the same time — with a slight bitterness. The core tone of blue agave is expressed softly and unobtrusively. The original taste of this tequila is achieved, among other things, by using especially soft artesian water in its production. The aftertaste is long, warming, with a slight bitterness. Very high quality tequila at a very affordable price.
La Chica Blanco («silver»). Contains 51% blue agave spirit, 38% alc., transparent and colorless, like vodka. It is not aged in barrels. It has a light aroma of meadow herbs with some alcoholic scent. In the taste, the tone of blue agave is “hidden”, there are slightly burning notes and a slight bitterness. In general, the taste is not pronounced and is quite close to the taste of regular vodka. The aftertaste is short, slightly astringent and warming. Quite a simple and inexpensive tequila, intended more for feasts, as an alternative to vodka, rather than for connoisseur tastings. In order to form a first impression of tequila in general, it is definitely not suitable.
Don Diego Gold («angry»). Contains 51% blue agave spirit, 38% alc. This tequila is produced in Mexico, but bottled, in contrast to most other varieties, in Germany — which significantly reduces its «authenticity» in the eyes of experts. But it has a pleasant effect on the price: «Don Diego» — A fairly inexpensive variety of tequila. In addition to blue agave alcohols and grain alcohols, this tequila contains sugar cane alcohols, which are usually used for the production of rum. The bright ash color of this tequila is given not so much by the short aging in oak barrels, but by the addition of a small amount of caramel syrup and cane sugar. It has a fresh-spicy aroma with hints of meadow herbs, fruits and sugar cane. Rich, «oily» taste with a slight bitterness and nutty flavors. The core tone of blue agave is not very pronounced. The aftertaste is short, warm, slightly scorching, with a slight «fruity» sourness.
Don Brito Reposado. Contains 100% blue agave spirit, 35% alc. A very original brand of tequila with a pronounced individual taste and aroma, unlike other varieties. In the production of this variety of tequila, blue agave spirits are double distilled and then aged in oak barrels from 3 to 11 months. Don Brito Reposado tequila has a light straw color. The aroma is extremely strong and bright, thick, spicy, giving freshness and exotic fruits, with a slight “smoke”. The aroma can be instantly felt a couple of meters away, and can only be appreciated from opening a bottle of Don Brito. The taste is very original, rich, slightly oily, with a slight hint of vanilla sweetness, without the sourness characteristic of many types of tequila. The core tone of blue agave is somewhat masked by the other flavor tones — and at the same time harmoniously combines with them. The finish is slow, warm, with a slight bitterness of black pepper at the end. Very decent tequila. We offer.
Canitxa Especial Blanco («silver). Contains 100% blue agave spirit, 35% alc. The color is white, transparent, with a slight silvery shimmer. The aroma of fresh blue agave juice with a slight hint of alcohol. The taste is simple, pronounced — almost exclusively the taste of the bluest agave with a hint of black pepper. Drinks very easily and smoothly. The aftertaste is long, warming, without any special additional nuances. Reminds me of good vodka, only distilled from blue agave.
Herradura Original Reposado. Contains 100% blue agave spirit, 40% alc. The color is rich, deeply angry. Aged in oak barrels for 11 months. This tequila is not exported; it is sold only in Mexico itself. The aroma is delicate, freshly herbaceous, with a dominant tone of blue agave, faint notes of tropical fruits and a light aroma of barley malt, immediately giving an association with Scottish whiskey. The taste is soft, rich, with tones of herbs, tropical fruits and a slight hint of green lime, which frame and slightly hide the core taste of blue agave. The aftertaste is long, warming, with light hints of oak and barley malt, which again evoke associations with Scottish whiskey. Slight bitterness at the end. A very rich tequila for true connoisseurs.
Mezcal con gusano Monte Alban (with agave worm) — mezcal. Contains 100% agave alcohol, 40% alc., has a light ash color. Aged in oak barrels for up to three years. The taste of this variety of mezcal (connoisseurs, mezcaleros, consider it one of the best) is bright and fresh, slightly oily, “smoky,” with tones of oak and agave; long, warm, slightly «pepper» aftertaste. Somewhat reminiscent of very good fragrant moonshine (again, in the best sense of the word!). The taste of mezcal is somewhat similar to the taste of tequilas such as Jose Cuervo Especial («Gold») and Pepe Lopez Premium Gold — at the same time, it is still more unique.
Each bottle of Monte Alban mezcal contains a Hypopta agavis caterpillar preserved in alcohol, feeding on young agave leaves — as a traditional sign of mezcal authenticity. Each bottle comes with a bag of a special «mezcal mixture» from salt, spices and dried and crushed Hypopta agavis caterpillar. The ritual of drinking mezcal is almost identical to the ritual of drinking tequila (we will talk about it below) — only instead of salt in the case of mezcal, a «mezcal mixture» from this bag.
According to Mexican tradition, when drinking a bottle of mezcal, «Janito's worm» carefully divided equally between the participants of the feast, and decorate the smaller part of the caterpillar — insult. In our country, as one would expect, our own tradition was born, which among the domestic «mescaleros» received the name «Mexican roulette». Tfrom, who gets the “Juanito worm”, eats it himself — and runs to the store for the next bottle!
With the tradition of putting a «Janito's worm»in every bottle of mezcal. There is an interesting legend associated with it. Allegedly, a long time ago, one Yankee, being in Mexico and entering a drinking establishment, asked for mezcal. And I found a worm in a glass. Yankee, naturally, was indignant. Nevertheless, the cunning owner of the establishment began to assure him that “this is how it should be.” Like, a worm living on the agave — this is a sign that mezcal — the most real one. They say that such a worm must be placed in every bottle of mezcal as a sign of the authenticity of the product…
And he quietly blinked at the assistant.
Yankee didn't believe it at first. But when the owner invited him to go down to the basement, and there the Yankee actually discovered a worm in each bottle — his doubts were finally dispelled. The establishment's reputation was saved, and the client was satisfied.
Of course, the understanding assistant, at a sign from the owner, quickly went down to the basement and threw a worm into each bottle in order to deceive the American. Since then, supposedly, the tradition began of putting “Janito’s worm” in every bottle of mezcal.
By the way, we ate this worm. Nothing special, I must say. Alcoholized protein — and nothing more. There is no difference in taste from mezcal itself. And from the mezcal itself is really good. But its full taste will be revealed to you only after the third glass — not before.
Of course, there are many other brands and varieties of tequila that are not mentioned in this article — but they should be discussed only after personal tasting. We sincerely hope that we still have everything ahead. Let us only add that tequila must be purchased exclusively from Mexico. Everything that is not produced in Mexico — this is not tequila at all: just like «cognac», produced outside the French province of Cognac, is not considered real cognac.
How to drink it correctly?
Classic: the indentation at the base of the left thumb on the back side (between the thumb and index) is lightly smeared with fresh lime juice and sprinkled with salt. A glass of tequila is taken in the left hand, in the right — a slice (preferably half a thin mug) of lime. You need to lick the salt, drink the tequila and snack on the lime.
Second option: everything is the same, but more lime juice is squeezed onto your hand, it is licked off along with the salt, and the tequila does not taste like lime.
Third option: drink tequila from a glass with a salted rim (rub the edges of an empty, clean glass with a slice of lime, dip in coarse salt, then pour in tequila). Drink with a slice of lime.
The fourth option (developed personally by Dmitry Gromov, and is gradually finding more and more adherents):
— Sprinkle half a lime with plenty of salt.
— Take the first glass of tequila, roll it in your mouth, taste the taste; swallow.
— Then bite the lime along with salt, but do not swallow it, but, leaving abundant sour-salty juice in your mouth, slowly strain the remaining tequila in the glass through it.
— Roll the resulting mixture in your mouth — and only swallow it first.
In Dmitry’s opinion, the taste of tequila in this version is revealed most fully. Xfromya Oleg, for example, prefers «classics».
Of course, you can drink tequila with just salt (without lime) or with lime without salt. Allowed — generally without both, like vodka. It is possible to wash down tequila with salt and «Tabasco» and other spices with chilled lime or tomato juice (as is often done in Mexico itself). If there is no lime, you can use regular lemon instead (but lime is still better).
Yes, one essential point: «ritual» with salt and lime, which more fully reveals the taste of tequila, is relevant for «silver» and «angry» tequila, and also for some varieties of tequila of the Reposado class. We personally recommend drinking Anejo class tequila and the best varieties of Reposado class tequila like cognac: slowly, savoring the aroma and taste and not overpowering them with lime. However, you can try it with or without lime — and compare sensations.
When mezcal, pure salt is replaced with «mezcal mixture» (aka — «worm salt», or «worm salt») — a mixture of salt, spices and dried and powdered Juanito worm. Moreover, some experts - «mescaleros» They believe that mezcal, as opposed to tequila, is best enjoyed with regular yellow lemon rather than lime. We tried — with both lemon and lime. In our opinion, it still tastes better with lime, but it’s better to try both options yourself and choose which one you personally like best. In the Mexican state of Oaxaca, where mezcal is especially popular, it is eaten with orange slices sprinkled with “worm salt.”
They snack on tequila (not limited to salted lime) in approximately the same way as vodka. Spicy Mexican (Caucasian, Spanish) meat dishes, hot beans, as well as green stuffed olives, cheese (including spicy and spicy), mussels, and fresh vegetables are especially recommended. Pickles or mushrooms also go well. Ukrainian version of the snack: black rye bread, lard and «blue» Yalta onion — A wonderful reason to drink to the friendship of peoples!
With the simple food of Japanese fishermen — sushi (which in our country is considered an exotic delicacy) — Tequila goes well too. Verified.
And at the end of the day — a couple of tequila-based cocktail recipes.
1. Classic «Margarita» — one of the most popular cocktails in the world. Simplicity and harmony, grace and unforgettable taste.
Prepare flat, wide glasses for Margarita. Run a slice of fresh, juicy lime around the rim of each glass and carefully dip the rim of the glass in the coarse salt on a wide plate. Then throw 3-4 small ice cubes into each glass.
In a shaker one-third filled with ice, mix the ingredients. Per serving of Margarita: 2 ounces* tequila (preferably Sauza Extra Gold), 1 ounce French orange liqueur «Cointreau» («Cointreau»), 2 ounces lime juice. Shake the mixture in a shaker and pour into prepared glasses. Garnish each glass with a slice of lime — and enjoy!
* 1 ounce = 28.4 ml; but for simplicity, it is possible to take an ounce for 30 ml. — the proportions will still not change, and the total volume of the cocktail portion will increase slightly.
2. «Tektonik». Long-drink cocktail developed by Oleg Ladyzhensky. Tested and highly appreciated by both of us, and in addition by a number of people whose taste we trust.
Fill a tall glass with a volume of 250-350 ml one third with ice cubes. Squeeze some fresh lime juice onto the ice. Pour from 25 to 50 ml into a glass. Sauza Blanco tequila (see from the volume of the glass taken). Top up the glass with chilled Schweppes tonic (only clear, colorless tonic is suitable, but in no case “fruit” tonic!). Garnish the Gfrom cocktail with a slice of lime. Drink through a straw — slowly and savoring the taste.
