Tequila is made only from blue agave, mainly in Jalisco; mezcal is made from 30+ agave types, mostly in Oaxaca, with a smoky flavor from earthen-pit roasting. Tequila is technically a type of mezcal.

Blanco (silver, unaged), reposado (2–12 months in oak), añejo (1–3 years), and extra añejo (3+ years). Longer aging makes the spirit smoother and darker.

Quality 100% agave tequila is sipped slowly at room temperature, without salt or lime — those are for cheap mixto. Mezcal is often served with orange slices and worm salt.

Don Julio, Patrón, Herradura, Fortaleza and Clase Azul are prized. Look for "100% agave" on the label — it distinguishes real tequila from diluted mixto.
